Desert - Strawberry Cheesecake

Who in their right mind would have through of making a cheesecake in a toasted sandwich maker? I would not have even considered it, if not for finding a recipe in my toasted sandwich maker user manual.

I can imagine you sitting there, reading this and trying to fathom what in the world this toastie would taste like. It tastes like warm cheesecake mix. It is warm and gooey.

This is a good toastie, a very good toastie.  Definitely number two in my list of all time good desert toasteis. Whilst is not as good as white chocolate, ricotta and raspberry, it is a close contender.

Which desert toastie recipe do you prefer?

Strawberry Cheesecake

Makes: 2 toasties

  • 125g cream cheese, softened
  • 1 tsp. finely grated lemon rind
  • 1 1/2 tbsp. icing sugar
  • 50g strawberries, diced
  • 4 slices of bread
  • butter

  1. Preheat the toastie maker and butter each of the four slices of bread.
  2. Combine the ingredients in a bowl and mix thoughrally.
  3. Place one slice of bread, butter side down, onto the bottom grill plate.
  4. Spoon half of the mixture onto the centre of the bread.
  5. Place the top piece of bread on top of the mixture, butter side up.
  6. Repeat steps 3 to 5 for the other grill plate.
  7. Gently close the lid and allow to toast for approximately 3 minutes, or until the bread has browned sufficiently.
  8. Dust with icing sugar and serve immediately.
