Desert - Peach Surprise

MMMM desert toasties are fast becoming my favourite toasties. The crispness of the bread and the sweetness of the filling is just magical. The combination of mixed spice and sour cream complements the peaches beautifully.

I will definitely be making this again.



Peach Surprise

Makes: 2 toasties

Ingredients:

• ½ cup tinned peaches, diced
• 1 tsp. sugar
• 1 tsp. mixed spice
• 2 tbsp. sour cream
• 4 slices of white bread
• butter 
• icing sugar for dusting

Method:

1. Combine the tined peaches, sour cream, mixed spice and sugar in a bowl.
2. Preheat the toastie maker and butter each of the four slices of bread and remove crusts.
3. Place one slice of bread, butter side down, onto the bottom grill plate.
4. Spoon half of the mixture onto the centre of the bread.
5. Place the top piece of bread on top of the mixture, butter side up.
6. Repeat steps 3 to 5 for the other grill plate.
7. Gently close the lid and allow to toast for approximately 3 minutes, or until the bread has browned sufficiently.
8. Remove from sandwich toaster, dust with icing sugar, and serve immediately.

Variations:

• Replace peaches with another type of fruit or berry.
