What To Do With Leftover Tuna - Tuna Melt


What today’s toastie lacks in looks, it makes up for in taste. It is very easy going, a perfect toastie for a dull day, where you want comforting to eat. It is the perfect wet weather toastie. The first time I made this, it was bucketing down with rain and I was huddled at my desk with my toastie, a cup of tea with my portable heater on full.

Tuna Melt

Makes: 2 toasties

Ingredients:
  • ½ cup tuna
  • 2 tsp. sweet pickle relish
  • 1 tbsp. spring onion, finely chopped
  • 1 tbsp. mayonnaise
  • 25g cheddar cheese, grated
  • 4 slices of bread
  • butter (optional)

Method:
  1. Preheat the toastie maker and butter each of the four slices of bread (optional).
  2. Combine the tuna, spring onion, mayonnaise and relish.
  3. Place one slice of bread, butter side down, onto the bottom grill plate.
  4. Spoon half of the mixture onto the centre of the bread and top with half of the cheese.
  5. Place the top piece of bread on top of the mixture, butter side up.
  6. Repeat steps 3 to 5 for the other grill plate.
  7. Gently close the lid and allow to toast for approximately 3 minutes, or until the bread has browned sufficiently.

Variations:
  • Replace the cheddar cheese with another flavour, for example, swiss or monterey jack.
