No Cooking Required - Tuna & Creamed Corn


There are some mornings, where I am an absolute sook and will not get out of bed without hitting the snooze button three times. These mornings often correspond to times where I have been too lazy to organise my lunch the night before. Doh!

On these mornings, the fist thing I grab is a can of flavoured tuna. Its quick, easy, and does not taste too bad (especially with cheese). Thankfully, I only hit snooze twice this morning. Plenty of time for a bachelor-style toastie recipe!




Tuna & Creamed Corn

Makes: 2 toasties

Ingredients:
  • ½ cup of tuna
  • ½ cup of creamed corn
  • 3 tbsp. spring onion, finely sliced
  • salt and pepper to taste 
  • 4 slices of bread
  • butter (optional)

Method:
  1. Preheat the toastie maker and butter each of the four slices of bread (optional).
  2. In a small mixing bowl, combine the tuna, corn, and spring onion. Season with salt and pepper.
  3. Place one slice of bread, butter side down, onto the bottom grill plate.
  4. Spoon half of the mixture onto the centre of the bread.
  5. Place the top piece of bread onto the mixture, butter side up.
  6. Repeat steps 3 to 5 for the other grill plate.
  7. Gently close the lid and allow to toast for approximately 3 minutes, or until the bread has browned sufficiently.

Variations:
  • Replace tuna with ½ cup of chicken.
