Pizza - Veggie

Another day, another lunchtime toastie. People often remark how they love the smell of a cooking toastie. It does not matter what is inside, there is something about the smell of toasted bread, which makes people drool.

When it comes to weekday lunchtime drool-ability, microwaved pizza, must be in the top 10. Today, I am going to take it one-step further.

Meet the ultimate tease... pizza toasties!

My workmates are going to hate me!

Veggie

Makes: 2 toasties

Ingredients:
  • 2 tsp. fresh tomato, diced
  • 2 tsp. red capsicum, diced
  • 2 tsp. onion, diced finely
  • 2 tsp. pineapple, diced
  • ½ tsp. garlic, minced
  • 2 pinches dried oregano
  • 2 tbsp. mozzarella, grated
  • 2 tbsp. tomato paste
  • 4 slices of bread
  • butter (optional)

Method:
Arrange each of your ingredients
on top of each slice of bread as if
you were creating a real pizza.
  1. Preheat the toastie maker and butter each of the four slices of bread (optional).
  2. Arrange your ingredients on top of two of the four slices of bread (butter side down), as if you were making a real pizza.
  3. Place one slice of bread, butter side up, on top of your completed pizza.
  4. Place the pizza into the sandwich toaster or jaffle maker.
  5. Gently close the lid and allow to toast for approximately 3 minutes, or until the bread has browned sufficiently.
